Smith Minestrone Soup


Ingredients:

  • 2 stock cubes (combinations of chicken, beef &vegetable, eg 2 knorr chicken)
  • 4 carrots (sliced)
  • 1 large or 2 medium onions
  • 2 celery sticks
  • 1 leek [optional]
  • 3 medium potatoes
  • 500g carton or jar of tomato passata
  • 1 tsp minced garlic
  • 1 can of cannellini beans
  • 1 - 2 oz pasta (wagon wheel)
  • 2-3 litres of water
Directions:
  1. Dissolve stock cubes in hot water and add to pot
  2. Chop vegetables and add to pot
  3. Add remaining ingredients
  4. Bring pot to boil
  5. Simmer for 1 -2 hours, until vegetables are tender
  6. Serve with sprinkling of parmesan cheese [optional]
