Cookie Pie?

I found a recipe ages ago that looked absolutely fabulous and I've been dying for a chance to make it. We had some friends over for dinner the other night and it seemed like the perfect occasion. (I can't bake unless company's coming or we'll eat it all ourselves!)

  • 1 unbaked 9-inch (4-cup volume) deep-dish pie shell
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 3/4 cup (1 1/2 sticks) butter, softened
  • 1 cup (6 oz.)
  • 1 cup chopped nuts [I left these out]
  • Sweetened whipped cream or ice cream (optional)
All in all it was a success but not as dreamy as I'd imagined. Really it just tasted like an und
ercooked cookie, but everyone seemed happy with it. I don't know if I'll make it again though,... too many other interesting things out there to try to spend time on the mediocre. :)

Mexican Cocoa

Just came across this one in a magazine and it sounds divine.

I don't think the chocolate liquor is really up my alley but I'm sure it could be replaced with something else. The rest of the recipe sounds quite good though. If you try it before I get a chance, let me know how it turned out!

Mom's Applesauce Cake

UPDATE: Recipe says 1/2 c. applesauce but it should be 1½ cups applesauce

This one is for my mother. She's lost this recipe almost as many times as she's made it. We have half a dozen copies of it floating in at least 2 countries and 3 states, but every time she wants to make it, the recipe has undoubtedly disappeared. Hopefully this will make it easier for her to find in the future.

Just click on the picture to get a proper sized readable version. :)
