Ingredients:
- 2 cups mashed banana (~ 3 bananas)
- 3.5 cups all-purpose flour
- 2 tsp baking soda
- 2 tsp salt
- 3 cups sugar
- 1 cup vegetable oil
- 2/3rds cup water
- 4 eggs
- 1 tbs cinnamon
To make pumpkin bread instead:
- substitute 2 cups of grated pumpkin instead of bananas
- add 1.5 tbs cinnamon
- add 2 tsp nutmeg
Directions:
- Mix oil, water, banana (or pumpkin) and eggs in a large bowl.
- Add the rest of the ingredients and mix well.
- Pour into greased and floured loaf pans (this makes around 3-4 loaves).
- Bake at 350F / 176C for 1 hour.
